After a bad week of grocery buying, Ernie and I decided to revamp our food shopping and planning regimen. We made it to Tuesday, after shopping on Sunday, to discover we had no food left for dinners. UGG! Grocery shopping can be so overwhelming without a good plan, so we sat down to get some new ideas and think of ways to be more efficient with our spending. Here are some "fruits" of that labor.
Trying something new: homemade from scratch margaritas with the Vitamix! The recipe called for a lemon, a lime, an orange, ice and sugar
While we enjoyed our frosty drinks we made dinner and our first ever whole chicken.
The chicken was stuffed with apples, celery, onions, rosemary and thyme. The outside was rubbed with olive oil, rosemary and thyme then baked for 3 hours. It smelled delicious!
For dinner we decided to try vegetarian, since eating more veggies is both healthy and easy on the wallet--meat can be pricey! We made a mexican veggie recipe I got from Sam the Cooking guy, heated up some black beans, and boiled potatoes. Put all together with chips and salsa it was a super tasty meal and really fun to make!
Cooking is also a fun way to spend time together and it is great to sit down and enjoy the food we've made. We are looking forward to more tasty recipes to come!
